An Australian blogger has created the ultimate snack – complete with crispy potatoes, parmesan cheese, and Maggi two-minute noodles.

Gail, who blogs under From the Pantry to the Table on Facebook, shared her simple recipe showing exactly how she made the cheesy potato rolls at home.

Ingredients:

  • 3 medium potatoes, peeled and chopped
  • 1/2 a small brown onion, finely diced
  • 2 tbsp parmesan cheese, finely grated
  • 1 tsp red chilli flakes
  • 3 tbsp rice or potato flour
  • 1 tbsp chives, finely chopped
  • 2 packets Maggie chicken 2-minute noodles
  • 1/4 cup flour
  • 1 cup of water
  • Salt and pepper to season
  • Oil for frying

Method:

Peel and dice the potatoes. Place them in a pot of cold water, and bring to boil, cook until the potatoes are tender.

Drain and set aside until cool enough to handle. In a large bowl, add the finely diced onion, cheese, chilli flakes and flour, and mix until well combined.

Take a tablespoon of the mixture and use damn hands to press into little cylinder-shaped logs. Repeat until all mixture is used.

Use a rolling pin and crush noodles well, tip into a shallow bowl – and reserve seasoning sachets.

In another shallow bowl, add flour and seasoning sachets, and mix to combine. Gradually add water until you have a smooth pancake-like batter.

Dip potato rolls into the batter then roll in crushed noodles. Repeat until all mixture is used. Place potato rolls on a tray and refrigerate for at least one hour.

Heat oil in a deep pan and fry until golden brown and crisp.

Serve with a spicy tomato dipping sauce.
