If you are into low-carbohydrates and looking for an easy on-the-go snack, then try this low- carb brownie recipe which makes about 15 squares.

Ingredients

50g 90 percent dark chocolate

125ml coconut oil

125ml cocoa powder

250ml ground almonds

30ml coconut flour

4 eggs

180ml xylitol

5ml vanilla extract

45ml almond butter

5ml baking powder

2ml fine sea salt

60ml desiccated coconut

60ml flaked almonds

Method

Preheat oven to 180°C.

Line a 16 – 25cm lamington pan with baking paper and spray with non-stick cooking spray.

Place the chocolate and coconut oil in a glass bowl and microwave on high for 1 minute. Remove and stir until melted and smooth.

Pour the melted chocolate into a food processor with the cocoa powder, ground almonds, coconut flour, eggs, xylitol, vanilla, almond butter, baking powder and salt. Pulse until well combined.

Pour the mixture into the prepared pan and sprinkle over the coconut and flaked almonds.

Bake for 20-25 minutes until a skewer inserted into the middle of the brownie comes out clean.

Remove and cool in the pan for five minutes before turning out onto a board.

Cut into squares and serve warm with a dollop of creme fraiche.
