CAPE TOWN – Over the past few years, my mom and I have searched through countless recipe books and food publications to find the ultimate brownie recipe. Many brownies have fallen, yet only one survived them all.
Here’s the recipe that’s been a family favourite for the past two years:
Makes: 1 dozen (large) or 2 dozen (small)
2 large eggs
1 1/3 cups cake flour
3/4 cup cocoa powder
1/2 tsp baking powder
2 cups dark chocolate nibs (choc chips are also fine)
1/4 tsp salt
2 cups white sugar
1 tsp vanilla extract
2/3 cup softened butter
1/2 cup water
1/2 cup pecans (optional)
1. Preheat oven to 325°C.
2. In a large bowl, mix the cocoa and baking powder with a third cup of softened butter.
3. Add the boiling water before adding the sugar, eggs and the remaining butter.
4. Add flour a third at a time to prevent any lumps. Once all the flour is mixed in, vanilla, salt, pecans (optional) and the dark chocolate nibs/chips.
5. Pour into a greased 13×9 inch baking pan, greased or lined with baking paper. Bake 35-40 minutes or until brownies begin to pull away from the sides of the pan. Another trick is to place a skewer in the centre of the and remove. If it comes out clean, the brownies are baked. But do remember that they are choc nibs/chips in the mix.
6. Cool and serve with whipped cream or vanilla or chocolate ice cream and fresh mixed berries.
