Ingredients
2 pounds russet potatoes, peeled

1 cup all-purpose flour

1 teaspoon garlic salt

1 teaspoon onion salt

1 teaspoon salt

1 teaspoon paprika

1/2 cup water, or as needed

1 cup vegetable oil for frying

Method

Fill a bowl big enough to hold your potatoes with cold water. 

Slice your potatoes into either your classic stick-cut shape or with your curly cutter and put them in the water to keep them from browning as you prepare the frying oil.

Heat the oil in a large skillet over medium-high heat. 

As it’s heating, sift together your flour, salts, and paprika in a large bowl. Gradually stir in the water. 

The mixture should be thin enough that you can drizzle it from a spoon.

Dip potato slices into the mixture and place them into the frying pan one at a time, not too close together to avoid clumping. 

Fry them until they’re golden brown, remove them from heat, and drain them on a paper towel!
