Ingredients for Cherry Brownies (Makes 12)
150g (5½oz) salted butter
200g (7oz) plain, 60% cocoa solids chocolate, in chunks
175g (6oz) light muscovado sugar
3 large eggs
75g (2¾oz) plain flour
50g (1¾oz) plain or milk chocolate chips
150g (5½oz) fresh cherries, stoned and halved
Preheat the oven to 170°C/fan 150°C/gas 3. Grease and line a square 20cm cake tin with baking parchment.
Place the plain chocolate and butter in a medium pan and heat very gently, stirring until melted and smooth.
Remove from the heat and cool slightly, then beat in the light muscovado sugar using an electric mixer. Beat in the eggs one at a time.
Sift in the flour and beat until the mixture is smooth. Stir in the chocolate chips and cherries.
Pour the mixture into the tin and bake for 25 minutes for squidgy brownies or another 5 minutes for a more cake-like texture. Allow to cool, then cut into squares and pack into a cake tin.
