Makes 12
Ingredients
4 ripe bananas, mashed
180ml white sugar
1 egg
5ml vanilla essence
80g butter, melted
375ml flour
5ml baking powder
5ml bicarbonate of soda
pinch of salt
125ml chopped pecan nuts
Method
Combine the bananas, sugar, egg and vanilla in a large mixing bowl. Stir in the melted butter.
Sift the dry ingredients, then add this to the banana mixture. Mix lightly until just combined.
Fold through the pecan nuts.
Spoon the mixture into a well-greased muffin tray and bake in a preheated oven at 180degC for about 20 minutes.
Leave to cool for 5 minutes, then remove the muffins and cool on a cooling rack.
