Valentine’s Day dessert without the guilt.

The age-old dilemma – Valentine’s Day is all about chocolate, and you want to indulge, but you don’t want to feel sick after all that sugar. Well, we have the perfect solution!

This super yummy choc-coconut mousse is high in protein, vegan, sugar-free, banting friendly and completely delicious! 
 
This is an ideal, super fast treat to satisfy your sweet tooth when you feel a craving coming along. We absolutely love this dessert – it is so easy to make and contains clean, healthy, wholesome ingredients. 
 
This choc-coconut mousse is rich in healthy fats, which keeps blood sugar levels nice and stable, promotes glowing skin and leaves you feeling completely satisfied. Oh and totally Valentine’s Day approved too! You can enjoy a yummy chocolate dessert with BAE and he can feel good knowing that his body is being fueled with protein. 

 

Vegan Choc-Coconut Protein Mousse (Serves 2-4)

 
Prep Time: 10 mins

 

Ingredients
400ml can coconut cream (preferably organic)
½ ripe avocado 
4 tbsp. raw cacao powder
1 tbsp.  xylitol
1 tbsp. vegan protein powder (we recommend Lifematrix brown rice protein powder; available at most health stores)
¼ tsp cinnamon
1 tsp. vanilla extract
Toppings:
1 tbsp cacao nibs
3 fresh strawberries (sliced)
 
Method
Place all ingredients in a food processor and blend for 3-4 minutes until well combined. Mixture should thicken gradually.  
Pour mixture into 4 small wine glasses or dessert bowls. 
Top with raw cacao nibs and sliced strawberries. 
Chill in the fridge for at least 3 hours, or until firm. 
Served chilled. Enjoy by yourself or with someone special!
