I love bacon!

It always surprises me how many meals can be made using this delicious cold meat. Since I always have bacon in my fridge, I’m always searching the recipe sites on the net or paging through cookbooks to find any interesting, yet easy bacon recipes that I can try out.

Now I’m no chef and I hate spending time in the kitchen, maar ek hou van lekker eet. Macaroni and cheese with lots and lots of bacon bits has become my favourite go-to dish.

It combines two of my favourites, Mac and cheese, and obviously, bacon. It’s easy to make and the bacon can be substituted with macon, ham or any cold meat of your choice. Whether you’re having spek en eiers, French toast, my personal favourite macaroni and cheese, or just bacon with bacon, there’s no denying that it does make any meal taste good.And I never skimp on it. Never.

It’s either lots of bacon or none at all. It’s one of those foods that people either love or hate. Eat it or don’t eat it, be it for religious reasons or otherwise.There’s very little that one cannot do with bacon. This weekend I made a chicken stir fry and tossed some left over bacon into the pan.

When a colleague told me about a little restaurant in the CBD that only sells bacon, I knew I had to find it and try it. Bacon on Bree is owned by a husband and wife who decided to open their own “bacon bar”. Owned my Richard Bosman and his wife Justine Seymour, Bacon on Bree opened its doors just over a year ago in April 2015.

There are 13 bacon meals to choose from, and the meals are named after famous fictional characters, actors and even politicians.Fancy a Julius Caesar salad with your Frank Sinatra sandwich?

And to wash it down, there’s a Bacon Mary. A Bloody Mary with a bacon twist, bacon-infused vodka. Manager Cassandra prepared two of their most popular dishes, the Miami Vice and The Breakfast Club, for Daily Voice. Both meals contain the obvious ingredient, but the bacon can be removed or replaced and it still tastes just as good.

The Breakfast club is a combination of bacon, avocado, halloumi (a semi-hard cheese that can be grilled) and mushroom served on a slice of toasted sourdough. Both meals are very simple to make and can be adjusted according to your preference.

How to make Megan’s Mac and Cheese:

Ingredients:

25g butter

1 tablespoon of olive oil

2 onions, finely chopped

225g ham, chopped (can be substituted with bacon or macon)

275g macaroni, cooked

Sauce

75g butter

75g plain flour

850ml milk

200g grated cheese of your choice

1/2 teaspoon of mustard (optional)

Salt and pepper

Method

For the sauce, melt the butter in a pan then stir in the flour.

Cool over a medium heat for a few minutes, stirring it to make a smooth paste.

Add milk to the pan, stirring until smooth.

Repeat until all the milk has been added.

Cool and stir until boiled and thickened.

Stir in 150g grated cheese, mustard and seasoning. Stir until cheese melts. Set aside.

Heat the butter and oil into a pan and fry the onions for 3-4 minutes until soft but not brown.

Pre-heat the grill to high. Mix the onions, ham, macaroni and sauce and hear through.

Spoon into a dish. Top with remaining cheese. Grill until cheese is melted and golden.
