Dude, you’re hungry and who wants to spend hours toiling in the kitchen, when your stomach is gnawing at you?

Here’s a hunger buster recipe: The filling & easy-to-make Loaded Nacho’s meal

Ingredients:

2 Avocado’s, pitted & Diced

2 onions diced

Chicken fillets, cubed and marinated in Red ginger garlic paste

1/2 teaspoon Chilli powder

1/2 teaspoon Cumin spice

1/2 teaspoon Salt

1/2 teaspoon black Pepper

1/2 teaspoon Paprika

3 red chillies chopped

1 can of baked beans

2 tomatoes, diced

Half a bunch of fresh dhania/cilantro, chopped

Bag of Blue Dorito’s

2 cups of grated Chedder cheese

2 Tablespoons of Lemon juice

1/2 cup Hot Water

2 Tablespoons of Oil

Optional: Sour cream

Method:

In a skillet over medium-high heat, add the oil and half of the chopped onion.

Cook it until starting to soften, then add the chicken.

Cook the chicken until it’s golden brown, then drain the fat.

Add the chili powder, paprika, cumin, salt, and pepper and stir to combine.

Add the beans and hot water and stir.

Reduce the heat to low and simmer while you prepare the other ingredients.

Pico de gallo (Salsa fresca):

Combine the other half of the chopped onion with the chopped tomato, chopped chillies, chopped cilantro/ dhania, lemon juice, and 1/2 teaspoon salt.

Stir it together and set it aside.

Finally:

To build the nachos, place a layer of Dorito chips on a microwavable platter.
Top with a layer of the chicken/bean mixture, then all but 1/4 cup of the cheddar cheese.
Add another layer of chips, another layer of the chicken/bean mixture, and the cheese.
Add a final small layer of chips, then a small layer of chicken and beans, then a final sprinkling of cheddar.

Microwave in 45 second increments, until the cheese is melted and bubbly.

Immediately sprinkle on the diced avocado and plenty of pico de gallo.

Optional: Add dollops of sour cream to give it an additional zing

Serve immediately & Enjoy!
