INGREDIENTS

4 tablespoons olive oil

11/4 pounds chicken tenders, cut into halves

Salt and pepper to taste

2 medium shallots, chopped

4 garlic cloves, chopped

2 tablespoons all-purpose flour

1/2 cup white wine

Juice of 1 lemon

1 cup chicken broth

3 tablespoons capers

1/2 cup chopped fresh parsley

12 ounces penne pasta

METHOD

Heat a deep nonstick skillet over medium-high heat.

Add 2 tablespoons olive oil and chicken.

Season the chicken with salt and pepper.

Cook for 2 to 3 minutes per side or until light golden brown.

Remove the chicken to a serving dish.

Add 2 tablespoons olive oil, shallots and garlic to the skillet.

Sauté for 3 minutes. Reduce the heat to medium.

Stir in the flour and cook for 2 minutes.

Whisk in the wine and cook for 1 minute to reduce the liquid. Whisk in the lemon juice and chicken broth.

Stir in the capers and parsley. Bring to a low boil.

Return the chicken to the skillet. Cook until heated through.

Meanwhile, cook the pasta until al dente; drain.

Combine the hot pasta and chicken with sauce in the serving dish and toss to mix.
