Avocado Fries Recipe:

INGREDIENTS

3 ripe avocados
½ cup all-purpose flour
Salt and black pepper
2 eggs
1½ cup panko breadcrumbs
1 Tbsp butter or margarine, melted
½ tsp garlic powder
½ tsp onion powder
½ tsp paprika
½ tsp salt
¼ tsp freshly ground black pepper
Cooking spray

METHOD

Preheat oven to 230°C

Line a baking sheet with foil and place a wire rack on the sheet. Set aside.

Slice avocados lengthwise – for three avocados [20-22 fries]

Set up three bowls in an “assembly line”.

In the first bowl, place the ½ cup of flour and add a pinch of salt and a few grinds of black pepper.

Crack the eggs into the middle bowl and beat lightly.

In the last bowl, combine the panko and melted butter and mix with your fingers to coat.

Add garlic powder, onion powder, paprika, salt, and pepper and stir to combine.

Dredge each avocado slice in the flour, and then the beaten egg.

Coat thoroughly with the panko and place on the wire rack. Spray lightly with cooking spray.

Bake for 20-25 minutes, until panko is lightly browned.

Cool for about ten minutes and serve with dipping sauce of choice.

Boss versions of Avocado Fries:

Avocado fries with pico de gallo, feta, and a spicy mayo dipping sauce. Step aside avocado toast, there is a challenger in town, and these avocado fries are in it to win! Now, when I saw this recipe in Eat Delicious by @dennistheprescott, I thought to myself, really breaded and fried avocado? It sounded strange. Am I glad that I tried this recipe! It’s so crazy good! Wedges of avocados are dipped in flour, eggs, and then spicy panko bread crumbs and every so gently fried for just long enough on each side the the crumbs to crisp up. It only takes about 45 seconds per side so the avocado stays firm and only the edges slight soften. Topped with salty feta, and served with a vibrant pico de gallo, and a squeeze of tart lime, and then dipped in spicy mayo and you are in heaven. This is such a great appetizer! My son had some friends over and one tried it and even asked for more! That is impressive! This is another great recipe from this month’s pick for my #rainydaybitescookbookclub.
