Yes, Mac’n’cheese is usually made with macaroni, but since there was no macaroni around, I made do with spaghetti and what a great decision that was! This spaghetti and cheese pasta dish is one for the books!

As legend has it, Marco Polo first tasted spaghetti in the Chinese court of Kublai Khan, and then brought it with him back to the West. But the debate over pasta’s origins is still unresolved: Some say it was China, others claim it was Ancient Greece.

Ingredients:

A handful of spaghetti

2 tablespoons of flour

3 tablespoons of salted butter

Salt and pepper to taste

a cup of Full Cream Milk

A cup of Cheddar cheese

Method:

Boil the spaghetti till soft.

In a saucepan heat your butter, and add your flour stirring continuously till all the lumps are out. (Don’t allow it to burn!).

Once cooked, add your milk, salt and pepper and allow to boil.

Remove from heat and add your cheese and then put it back on heat to melt the cheese into your sauce.

Pour over the spaghetti and sprinkle some chopped parsley and serve.
