1 cup coconut cream (preferably stored in a carton or jar)

1 cup black eyed beans, soaked and cooked

1 carrot, diced

pinch cayenne

½ cup green beans, sliced

a handful mushrooms, sliced

1 tsp curry powder

½ tsp paprika

½ tsp sea salt

½ tsp cumin


1. Sauté onion and garlic, then add the spices.

2. Cook for a few mins, then add the coconut cream, cooked beans and vegetables.

3. Stir well and simmer gently, then sprinkle with fresh herbs (i.e.: mint).

4. Serve with rice OR tortillas and salad.
