2 cups gluten-free flour mix, in desserts

2 tbs baking powder

1 tbs pea flour, mixed with 2 tbs water

4 tbs extra virgin olive oil or stewed/mashed fruit

1 cup almond milk


1. Mix dry ingredients

2. Add 2 tsp cinnamon to sweeten, if its not a savoury muffin

3. Mix other ingredients together and then add to dry ingredients (folding softly)

4. Leave mixture slightly unmixed

5. Add the (Below) combination of your choice, or create your own:

-mashed pumpkin or kumara

-berries & walnuts

-apple & cinnamon

-herbs & grated carrot or zuchinni

-apple & berry

-banana & walnut

-lemon and/or orange juice & poppy seeds

-seeds are nice too, though having them raw is more healthy!

6. Bake at 200ÂșC, in greased (with olive oil) muffin tins, for around 10 – 15 mins or until golden brown.
