Coffee, chocolate and chia seed pudding (Serves 4)

This is a very quick pudding – just mix it up and chill it in the fridge. The chia seeds make everything set to a soft, mousse-like texture.

Carb count: 14g per person

Ingredients

For the pudding:

500g yoghurt
70g chia seeds
1tbsp orange extract
2tbsp cocoa powder
20ml freshly made espresso
1tbsp erythritol

To finish:

About 2tsp grated dark chocolate (80 per cent cocoa solids)
About 2tsp cacao nibs (pieces of dried cacao bean, available online or from health food stores)
About 2tsp roughly crushed espresso beans

Directions

Put the yoghurt into a bowl and whisk in the chia seeds, orange extract, cocoa powder, espresso and erythritol. 

Spoon the mixture into 4 serving glasses and cover with clingfilm. Chill for 12-24 hours. When ready to serve, sprinkle with the grated chocolate, cacao nibs and crushed espresso beans.
