spiced pumpkin smoothie

High in fibre, protein, potassium, antioxidants, and omega 3’s, this smoothie bowl is all kinds of good!

I absolutely love this breakfast treat and the kids will go crazy for this too, especially during Halloween. If you eat dairy, you can also use yogurt instead of coconut cream, but personally coconut makes everything that much more delicious.

Ingredients

Serves 1 | Ready in 7 mins

  • 1/2 cup coconut cream
  • ½ cup almond milk
  • 1 cup steamed pumpkin
  • 1 frozen banana
  • 1 tbsp. chia seeds
  • 1 scoop vegan protein powder (I prefer pea protein)
  • Pinch salt
  • Pinch ground ginger
  • Pinch cinnamon
  • Pinch ground cloves

Toppings

  • 2 tbsp flaked almonds – toasted
  • 1 tbsp. grain free granola
  • 1 tbsp pumpkin seeds
  • Pinch cinnamon

Instructions

Step 1:

Place all ingredients in a food processor or blender and blend thoroughly until all ingredients are well combined. This should form a thick and creamy smoothie base.

Step 2:

Simply pour into a large bowl, top with flaked almonds, grain free granola, pumpkin seeds and a sprinkle of cinnamon and enjoy!
